Fire is the heart of Cabin Wānaka, stripping dining down to reveal the raw, honest work of the hearth. It’s a visceral way to cook that requires the chef to be present in every spark using wood, air, and timing. Every seat, every sightline, and every pocket of warmth is dictated by the central flame.
Inside the Wānaka restaurant, wood is not hidden away. Stemming from the belief that the most important ingredient isn’t found in the pantry, wood is stacked against the walls and drying in the ambient heat of the kitchen. We treat it as if it were a spice, selecting specific logs for the way their smoke perfumes a ribeye or blackens a vegetable.
Because fire demands integrity, we partner closely with local farmers and regional suppliers to source prime Wānaka steak, pristine seafood, wild meats and heirloom vegetables. The result is a shifting, seasonal menu defined not by a country or a style, but by a philosophy - Wānaka woodfired.

Fire gave us the night, offering our ancestors the hours needed to become more than just survivors.
